THE ULTIMATE VEGAN LEMON CAKE

Spring has finally arrived and with it, our beloved fresh,moist and fruity cakes for dessert.


Today we will make a easy and delicious vegan lemon cake with lemon butter on top and a sprinkle of lemon zest.


Sounds yummy right?! This vegan cake is so lemony and delicious that you won't stop making it over and over!





But, do you know how to make a vegan lemon cake? Here we do! And we are more than ready to share it with the world!


Who's ready for a lemon cake dessert?!


I remember how when I was a child my mom would make all kinds of fruity cakes when spring was around the corner: Straberry cake, banana cake, lemon cake..

And let's face it, I wait for all those desserts enthusiastically even now that I'm a grown-up.

However, there's a little difference, now I eat vegan cakes, but this doesn't make it any worse!


And let's be real, who doesn't like a lemon loaf with lemon buttercream on top?




Actually, I dare to say that now I focus more on the real protagonists: LEMONS!

With this vegan lemon cake you will really appreciate the freshness of the lemons thanks to the lemon juice, lemon buttercream and lemon zest.

And let me tell you,the moisture of this lemon cake is insane!


This lemon cake is perfect for any occasion and really on a budget, just how we like things here!

You could prepare this lemon cake for any birthday, or for that friend that reeeeally loves any kind of fresh and moist cake.


This lemon loaf is really easy recipe, so it won't take you more than 1 hour to make, including oven time! And, as we said before, it's a really easy lemon vegan cake recipe, but not only that it's really affordable also!



You will end up with a really moist lemon cake ready to enjoy with your loved ones!

LEMON CAKE INGREDIENTS:


DRY INGREDIENTS:
- 1 1/2 cups (200g) of all purpose flour.
- 1 1/2 tbsp of baking soda.
- 1 1/4 cups (150g) of sugar.
WET INGREDIENTS:
-1 cup (200ml) lemon-tea infused water.
-1/2 cup (100ml) of any plant-based milk.(I used soy milk)
-1/4 cup (50ml) of vegetable oil.
-Juice of 1 lemon.


LEMON CAKE FROSTING


-1/2 cup of cashew nuts.
-1/4 cup of sugar.
-Zest from 1/2 a lemon.

HOW TO MAKE THE VEGAN LEMON CAKE


-Preheat the oven on 350 (180)
-First, add and mix on a large mixing bowl all our dry ingredients.
-Secondly,do the same with our wet ingredients on a different mixing bowl.
-Then, add slowly the wet ingredients onto the dry ones, whisking it all together.
-Place the mix on a medium-size cake pan and put it in the oven for 45 minutes or until a toothpick inserted in the middle of the lemon cake comes out clean.
-Remove it from the cake pan and let it cool while you prepare the lemon buttercream frosting.

HOW TO MAKE THE VEGAN LEMON BUTTERCREAM FROSTING


-Blend in a food processor all the ingredients until you come out with a smooth frosting.
-Put a layer on top of you cake and decorate your lemon cake as desired with the lemon zest.
-Remember that you can get as creative as you want with it with the lemon zest and lemon buttercream!
-Enjoy your lemony heaven cake!
